Preheat oven to 400°F. Toss sliced @sweet potato{1%large} with 1 tbsp @olive oil{3%tbsp}, @salt{1%tsp}, and @black pepper{½%tsp}. Spread on a #large baking sheet{} and roast until tender ~{20%minutes}.

Meanwhile, in a #blender{}, pulse @chickpeas{1%can}, juice of @lemon{1%unit}, remaining olive oil, and a pinch of salt until smooth for the dressing.

Divide @mixed greens{2%cups}, @green beans{1%cup}, halved @cherry tomatoes{1%cup}, and sliced @cucumber{1%medium} between plates. Top with warm sweet potato rounds and drizzle generously with the chickpea-lemon dressing. Serve immediately.
